The category has begun to shift. A handful of brands now ship genuinely PFAS-free baskets, using ceramic-coated steel, stainless steel mesh, or borosilicate-glass-walled chambers. The marketing labels are confusing — “PFOA-free” is not the same as “PFAS-free” — and the spec sheets do not always specify the coating chemistry.

Two basket constructions earn the PFAS-free label in this guide:

What’s actually in a coated air fryer basket

A standard air-fryer basket is aluminum or steel sheet metal stamped into a perforated bowl, with a coating applied to make it non-stick and dishwasher-safe. The coatings break down into four categories.

PTFE (the original, still dominant)

Polytetrafluoroethylene. The polymer Teflon is made from. PFOA — the manufacturing aid that was phased out internationally by 2015 — is gone from current PTFE production. But PTFE itself is still in the PFAS family, and the breakdown products of high-temperature PTFE (above 500°F) include perfluoroisobutylene and other PFAS compounds.

Newer-generation PFAS coatings (PTFE alternatives)

Several brands have switched to GenX or related PFAS chemistries marketed as “next-generation non-stick.” These coatings are still in the PFAS family. EPA’s 2024 designation of PFOA and PFOS as hazardous substances under CERCLA, and its 2022 drinking-water health advisory for GenX chemicals, underscore the regulatory direction. “Non-PTFE” does not mean “non-PFAS.”

Ceramic coatings (genuinely PFAS-free)

Sol-gel ceramic coatings — silica-based, applied as a liquid and cured at high temperature — are genuinely PFAS-free. The coating itself is benign. The trade-off is durability: ceramic coatings wear off within 6–18 months under daily air-fryer use, exposing the aluminum substrate underneath.

Uncoated stainless steel (the durable answer)

Stainless steel mesh or perforated stainless baskets. No coating, no breakdown, no replacement schedule. The trade-off is sticking — food sticks more than to coated baskets, especially batter-coated items and starchy foods.

The reason most air fryers are PTFE-coated is that air-fryer baskets get scrubbed with metal utensils, soaked in dishwashers, and exposed to 400°F+ temperatures. “PTFE coating,” “non-stick PTFE,” “fluoropolymer coating” — confirmed PFAS.

“Ceramic coating,” “sol-gel ceramic,” “ceramic-titanium coating” — PFAS-free.

“Stainless steel basket,” “316 grade stainless” — PFAS-free.

“Non-stick coating” with no specific polymer disclosed — assume PTFE.

What to do if you already own a coated air fryer

The Luo 2022 study points to coating damage as the key release mechanism: in simulated cooking, a single crack in a PTFE coating shed thousands of Teflon particles, and a broken coating shed millions. An intact coating releases far less than a damaged one. Three changes reduce exposure meaningfully:

1. Stop using metal utensils. Use silicone-tipped tongs or wood. Stop using metal mesh dividers and trays.
2. Hand-wash only. The dishwasher’s mechanical action and detergent both abrade the coating. The convenience of dishwasher-safe is the main reason air-fryer coatings wear out.
3. Keep the temperature under 400°F. PTFE breakdown accelerates above 500°F. Most air-fryer recipes do not require above 400°F; the higher ranges are marketing.
4. Replace at first visible scratching. A scratched PTFE basket is no longer protective; it actively sheds particles.
