Most American wheat is sprayed with glyphosate days before harvest. Not on the field across the season. Directly on the grain, hours before it goes into the combine. The practice is called pre-harvest desiccation, and it's why wheat-based products consistently test positive for glyphosate residue at the consumer level.
The European Union banned this practice in most member states. Italy banned it in 2016. That regulatory gap is the reason imported European wheat tests cleaner than domestic American wheat, even when both are labeled organic at the retail level.

How glyphosate gets into conventional wheat
Roundup, the brand name for glyphosate-based herbicides, is sprayed on wheat fields 7 to 14 days before harvest. The reason isn't pest control. It's drying. Glyphosate kills the plant on contact, which dries the grain uniformly and lets the combine harvest faster.
The Health Research Institute, a Fairfield, Iowa lab founded by John Fagan, has documented the practice extensively. Their reporting estimates that roughly 70 percent of wheat and barley acreage in the Dakotas and Montana is desiccated with glyphosate before harvest.
The U.S. imports a large fraction of its wheat from Canada. Manitoba data referenced in European Parliament records puts the figure even higher: 90 to 95 percent of Manitoba wheat acres are sprayed pre-harvest with glyphosate.
This is the contamination mechanism. The wheat isn't accidentally exposed to glyphosate runoff. It's deliberately sprayed days before it becomes flour.
What the testing actually shows in mainstream products
The Environmental Working Group published the most-cited residue testing in August 2018. Five of the 16 organic oat samples carried trace glyphosate at 10 to 30 parts per billion. The likely source: drift contamination from neighboring conventional fields, not deliberate use. Bob's Red Mill and Nature's Path were among the brands with detectable residue.
Wheat-specific residue data from the U.S. is thinner than the oat data. The USDA Pesticide Data Program tests for thousands of pesticide compounds, but glyphosate testing has historically focused on soybeans rather than wheat. UK government testing of wholemeal bread, cited via the Detox Project, has documented residues sometimes exceeding 500 parts per billion.
A 2020 study by Fagan and colleagues, published peer-reviewed, examined what happens when people switch to a 100 percent organic diet. Urinary glyphosate levels dropped more than 70 percent in one week. The study established that food, not environmental exposure, is the dominant glyphosate intake pathway for most Americans.
The Italy difference

What Jovial actually tests for
Jovial publishes Detox Project glyphosate-residue-free certification on most of their products. The Detox Project's threshold is 10 parts per billion, the standard government-recognized limit of detection for glyphosate testing. Detox Project certification is stricter than USDA Organic, which permits trace residues up to product-specific tolerances rather than requiring non-detect.
Independent third-party testing has corroborated the published certification. Tamara Rubin, who runs Lead Safe Mama, tested Jovial 100 percent Organic Einkorn All-Purpose Flour in June 2024 and found non-detect for the four metals of concern: lead, cadmium, mercury, and arsenic. A December 2025 retest showed trace cadmium and lead, both around 5 parts per billion, which is just over the laboratory's limit of detection.
That's an honest result. Not zero. Trace at the detection limit is the realistic floor for any agricultural product, and it's well below the levels associated with health endpoints.
Jovial does not publicly publish mycotoxin testing data (DON or vomitoxin, ochratoxin A). The Italian regulatory framework constrains mycotoxin levels for grain entering the food supply, but Jovial's website doesn't include batch-by-batch mycotoxin reports the way it does for glyphosate. Honest disclosure: Jovial isn't perfect

Tamara Rubin's 2024 testing of Jovial Organic Grain-Free Cassava Pasta found 77 parts per billion lead. The brown rice pasta line tested with elevated cadmium and arsenic. The sourdough einkorn crackers tested positive for lead.
This doesn't change the einkorn flour result. Cassava is a tuber crop with documented heavy metal accumulation issues across the entire category, not a Jovial-specific problem. Brown rice from any source absorbs arsenic from groundwater. The cracker result is harder to explain and worth flagging.
The honest framing: Jovial einkorn flour tests clean in independent third-party labs and carries Detox Project glyphosate certification. Other Jovial product lines have category-specific contamination issues that affect those products specifically. If you're switching for the einkorn flour, that's a defensible decision. What this means in practice
If you bake bread weekly and buy the cheapest organic flour at the grocery store, you're getting wheat that may carry residue from drift contamination but probably wasn't desiccated. That's better than conventional. It's not the same as Italian-grown.
